Sushi Takaya serves best with Shari Rice.
Rice used for Shari is an ancient rice which was taken at the foot of the naturally rich Shirakami mountain range now known as one of the world's heritage site. A red type of vinegar is mixed and serve similarly on how sushi was eaten during the Edo period. The red vinegar is a high grade sauce because it takes time to brew and a lot of labor to perfect the taste. In Takaya, we use the same red vinegar brewed in its old-fashioned way dstilling it for 6 to 7 years in order to get the original Edo-front sushi taste. Shari is slightly dyed brown adding a rounded taste of red vinegar to make it more tasteful. The sauce further complements the fresh ingredients.
